Fruits & Vegetables, the colours of beauty



Schopenhauer used to say that “nine tenths of happiness are based on health. 
Through it, everything is source of pleasure”.
What did he mean for “health”? And what did we mean today for this word, which has articulated its meaning over the centuries in proportion to the complexity of society? If health was synthetically meant to be absence of disease, today this concept is way more sophisticated. It is preferred to talk of wellness to mean not just the health of the body, but also the psychological well being of heart and mind. 

The well being starts at the table and this assumption, typical of the Western mentality, has resisted since Hippocrates, when the doctor was, incidentally, first and foremost a food expert. If it is true that we are what we eat, it is also true that our body, made of muscles, skin, bones, fibers, blood, cells, molecules and atoms, is the result of a possibly healthy eating style. The same is metaphorically and poetically true for our heart, as the synthesis of mood, emotional and social states. And it is even more true for our brain, which is not only a chemical and electrical device, but also a thinking engine which translates energy in reasoning, emotions, wishes, memories and dreams.

Therefore, The organic concept of health, focused on quantity and substance of inputs we ingest and digest, is today integrated by a more spiritual and holistic concept, based on quality, hidden virtues and intrinsic properties of these inputs. The Western idea of health is then interconnected with the Eastern one, which emphasizes the harmony between body and environment, Mankind and Nature, embraced in a continuous exchange where nothing is lost, but everything is renewed and transformed, with a contemporaneous modification of both the human being and his environment.
Still, one of the simplest and most satisfactory experiences of existence (with love and sex!) that is eating, is a source of ever growing worries, concerns, doubts and frustrations, rather than pure pleasure. It is maybe because of an often imprecise information, which creates confusion and anxiety instead than clarity and good mood through its contradictions and exploitations.

As a good vegetarian, I personally feel good with myself, in excellent psycho-physical shape and in harmony with Nature. With this, I do not mean to propose vegetarianism as the absolute philosophy of healthy feeding, because I am convinced that thre are no perfect nutritional recipes, that everybody can accept. Moreover science, including food science, is in continuous evolution, like a flame which constantly burn. When a spark ignites a new hypothesis, another spark is created somewhere else at the same time, ready to unleash an even more powerful fire. No authority can completely convince an individual or society that a nutritional thesis is completely right, because the final judgment on what is good and healthy comes from the psyche and sensorial perceptions of each of us. Still, we need parameters and references to point at the way without risking losing the direction. 

I have never been able to distinguish a cute veal who pastures quietly in the grass and a smoking rare cooked steak in a plate. I have always felt instinctively attracted to the fruit and vegetables from my garden, since this has been my food imprinting. My taste come from this. Obviously, when I go for my grocery and look for fruits and vegetables, I am spontaneously suspicious of the labels and indications of so-called natural products, which create me more embarrassment rather than confidence.

The language sometimes complicates things and emphasizes distances between an object and the awareness of it. I think that the vocabulary which is used to define the “goodness” of food is symptomatic of this new holistic conception of health. Today a food is considered healthy if fresh, pure, virgin, light, anti-oxidant, vitamin rich, de-intoxicating, depurating, energizing. All these attributes are intangible and invisible, but are related to concrete benefits, which can be understood more through confidence than reason. 
Fruits and vegetables should be symbols of a clean and transparent eating style, which makes us feel good by definition. However, a different terminology comes into play to complicate the issue: biologic and transgenic, for instance. These words are like mirages or ghosts on the shelves of supermarkets or in the colored baskets in markets or even on our tables, and they deceive or trouble us, rather than orient us in our choices.

I am not enough of an expert to give recommendations and sure information, because of my often contradictory and debating reads. However, I try to keep myself informed, and I believe we all have the duty to gain deep information on these themes, without getting too enamored of a philosophy, or ideological flag, but keeping constantly receptive and open to dialogue, without indulging in malignant and sterile debates. Scientific discoveries, also in the field of food science, are often appreciated after very long times, which cannot be foreseen in the present or immediate future. 

Goethe once said: “We know when we know little, indeed. The doubt grows with knowledge”. It is so true! A sure and wonderful thing is that Nature at work is amazing, both at microscopic and macroscopic level, both in the good and evil because Nature potentially comprehends everything, with no need for artificial solutions and corrections. Did you ever ask yourself (back to my love for vegetables) why fruit and vegetables have such captivating colors? No matter if you believe in God, in evolution, or simply in randomness, the beauty of vegetables is an incredible example of the Nature wisdom and the relationship between color and health is scientifically proven.

The color of vegetables comes from a variety of chemical substances, the anti-oxidants. Plants express their beauty with their colors: they capture the energy of the sun and convert it in life through photo-synthesis, which modifies energy in sugars and carbohydrates. the process is put in action by the exchange of electrons between molecules, which makes photo-synthesis similar to a nuclear reaction. 

Anti-oxidants are colored because the chemical properties allow to absorb electrons and to create visible colors. So, the carotenoids appear yellow thanks to beta-carotene (as in the pumpkin) red because of the lycopen (tomatoes), orange because of cryptoxanthin (oranges) and so on. Some anti-oxidants are colorless, such as ascorbic acid, or vitamin C, and vitamin E, because they act in more hidden parts of plants, where protection from electrons is necessary.

The action of anti-oxidants fights free radicals, which cause the ageing of organisms. Human beings are not able to produce natural shields against free radicals. We are not plants, and thus we are not able to produce anti-oxidants through photo-synthesis. We acquire them from vegetables, since they act in harmony with our organism and release their good content of irreplaceable substances. Hence, I like to think that vegetables look so beautiful colored, attractive and sensual to stimulate our senses and be useful for us, other than tempting.

In conclusion, being informed is fundamental to gain orientation, through a critical spirit, able to discover precious concepts among books, magazines and websites which fast update us on food, in order to avoid being hypnotized and deceived. Cautiousness is necessary in communication and listening, but being curious and hungry for knowledge is always essential. We live in wellness, but being not well informed can put us at risk. 

Maybe a correct and honest information could add that missing component of happiness that is mentioned by Schopenauer in the aphorism which was the beginning of all these considerations. 
For sure, the wise philosopher would have agreed with a great actor such as the late Massimo Troisi, who exchanged these ideas with his companion of adventure in the movie “Ricomincio da tre”:
She: “Why do you mind about the others? When there is love, there is everything…”
Troisi: “No, that’s health!”

Luna di vaniglia




Si può sentire il sapore della luna? L’odore di un colore o il canto di un fiore?

Una passeggiata attraverso i boschi, in una malinconica giornata autunnale, può rivelarsi un’inattesa esperienza sensoriale, capace di accendere scintille di pensieri ed emozioni. Non occorre andare troppo lontano da casa, scalare montagne o solcare oceani per emozionarsi, e nemmeno c’è bisogno che accada qualcosa di eccezionale per stupirci. E’ sufficiente guardare la Natura con occhi nuovi, lasciare che essa dialoghi con il nostro corpo e il nostro cuore, per mettere in moto una giostra di sensazioni tali da farci sentire in comunione con l’Universo. In questo modo, anche il panorama più quotidiano e disponibile può trasformarsi in un teatro animato di colori, suoni, odori e sapori, che si mescolano tra loro in un modo nuovo e sorprendente.
Pochi giorni fa, camminando lungo un sentiero che costeggia un torrente, non lontano da dove vivo, ho vissuto anch’io questa magia. Ho serpeggiato tra cespugli e fronde rosseggianti, seguendo il corso pigro dell’acqua fino al lago, plumbeo e immobile per l’assenza quasi innaturale del vento. A volte, quando si cammina, si dimentica che esiste uno spazio immenso anche sopra la nostra testa ma basta alzare gli occhi al cielo per scoprirlo e rimanerne incantati. Infatti, dall’alto, attraverso le cime degli alberi, filtrava un filo di luce, sottile ma tagliente come una lama, che animava le tenui sfumature di verde sulle foglie, non ancora del tutto divorate dalle audaci pennellate gialle e rosse dell’autunno.
E’ stato proprio allora che, in quello spumeggiare acceso di colori, ho sentito improvvisamente un sapore ben preciso, come se quei colori io li stessi mangiando! Tutt’a un tratto, ho percepito in bocca il gusto esotico del mango maturo, con la sua polpa densa e fruttata, che si scioglieva lentamente in succo fino al suo cuore.
Inebriata da quel curioso amalgama di sensazioni, ho proseguito emozionata a caccia di altre tracce che solleticassero i miei sensi, come un cane che fiuta il passaggio di un’allettante preda. Mi son sentita in balìa di un’eccitazione sconosciuta, tanto da chiedermi se i colori potessero avere anche un odore oltre ad un sapore. Ed è stato proprio il mio naso a darmi la risposta, poco più avanti, quando mi sono ritrovata come immersa in quello splendido quadro di Rousseau intitolato “Il sogno”. Una cascata di verde, a capofitto sul torrente, ha aggredito il mio olfatto di un non so che d’acre e pungente, che non ho saputo ricondurre a un cibo buono e goloso. Era semplicemente odore di verde, di foglie e di muschio. E l’acqua, dove le fronde s’inchinavano quasi ad abbeverarsi, accentuava prepotentemente quell’asprigno solletico dentro le narici.    
Sempre più estasiata, sazia di mango ed ebbra di verde, ho raggiunto infine il lago, mentre l’ultimo raggio di sole eclissava dietro le colline. Lì la temperatura era sensibilmente più alta rispetto al bosco e un flebile venticello faceva suonare le canne sinuose sull’acqua, come fossero vibranti corde d’arpa.
  Mancava proprio il sonoro in quell’inatteso concerto dei sensi. Ma, tutt’a un tratto, ho avvertito una dissonanza, come quelle improvvisazioni ritmiche della musica jazz, che ti scuotono e ti sorprendono. E ancora una volta è stato il mio naso a parlarmi. Non ho dovuto sforzare troppo la fantasia per distinguere un odore che zaffava prepotente l’aria, caricandola di amaro, di terra, di marrone e di … Difatti, lo scorcio che si è aperto ai miei occhi poco dopo confortava gli inequivocabili messaggi olfattivi.
Un bellissimo cavallo bianco, incurante di me e del mondo intero, beatamente rapito dal suo instancabile brucare, aggiungeva vita e movimento al teatro naturale. E aggiungeva anche l’odore forte di stalla, di fieno, di selvatichezza, che completava il quadro rendendolo più reale. Che animale sensuale! Forse stava riposando, dopo una corsa in libertà. Osservando quella creatura attraverso lo zoom della macchina fotografica, mi pareva di poter allungare un braccio e di riuscire a toccarla. Ho sentito, sotto le mani, il pelo ruvido, compatto e umido di sudore, la criniera ispida, folta e spettinata, nonostante il mantello bianco desse invece un’illusione di morbidezza, e ho sentito scorrere il flusso denso del sangue, il battito del cuore placarsi dopo la corsa, attraverso i muscoli caldi del collo, ancora tesi e pulsanti.
In pochi scatti ho rubato al cavallo tutte queste impressioni, assorbendole e mescolandole con l’incredibile impasto sensoriale già presente in me.
Rapita da tutti quegli incantamenti non mi ero quasi accorta che la sera era ormai inoltrata e che era arrivato il momento di tornare casa. Incamminandomi, mi sentivo leggera e in un certo senso eccitata mentre, nella mia testa, il pensiero logico cercava di farsi strada tra i residui delle emozioni provate fino a quel momento. La cosa mi piaceva, mi divertiva alimentare quella specie di conversazione interiore tra ragione e sentimento. Era come se il mio cammino non fosse più solitario ma che, all’improvviso e per magia, un grande scienziato della mente e un romantico poeta avessero deciso di accompagnarmi a casa per spiegarmi, ciascuno a suo modo, ciò che mi era successo quel pomeriggio. Ho accettato il gioco. In fondo dovevo pur camminare per almeno un quarto d’ora prima di rincasare e cosa di meglio che farlo in compagnia? Così, ho ascoltato dentro di me le parole dell’uomo di scienza che, con tono di ironica benevolenza, mi diceva: 
“Sai bene, che quello che hai provato non è una metafora poetica e non ha semplicemente a che fare con le virtù artistiche di un’anima particolarmente sensibile. Né, tantomeno, con visioni, allucinazioni o distorsioni della mente. In realtà, mia cara, si tratta di un fenomeno che la neuroscienza conosce benissimo e gli ha dato anche un nome: SINESTESIA ovvero “PERCEZIONE SIMULTANEA”. Naturalmente ne ha spiegato anche i meccanismi, dimostrando che, a volte, i segnali provenienti dall’esterno – colori, odori, suoni, sapori e sensazioni tattili – vengono percepiti da regioni del cervello che, normalmente, non sono preposte a quella funzione.”
” E allora che succede?” gli ho chiesto.
“In poche e semplici parole, succede che gli stimoli si avventurano per le vie neuronali attivando simultaneamente più regioni cerebrali, disorientando così i nostri schemi sensoriali e prendendosi un po’ gioco delle nostre percezioni. In questo modo, può succedere che un odore venga udito, un colore possa essere gustato, o un suono alteri la temperatura percepita dal nostro corpo, facendoci sudare o rabbrividire. Mi segui?”
 “Certo che ti seguo, non sono mica stupida.” ho risposto piccata.
“Bene. Non voglio prenderti altro tempo visto che stai per arrivare a casa, ma voglio aggiungerti che la faccenda è molto complessa e affascinante e ha altri interessanti risvolti. Alcune persone, ad esempio, associano ad una precisa nota musicale un colore: il do è rosso, mentre il fa diesis è blu. Pensa, questo può rivelarsi un utile meccanismo di memorizzazione di complessi spartiti musicali, non trovi? Per altri individui sono i numeri o i grafemi ad assumere un colore. Altre persone ancora attribuiscono ai giorni della settimana e ai mesi dell’anno, sapori o colori precisi, senza sapere perché. Il lunedì può assumere l’aroma del caffè, mentre Agosto potrebbe essere una tavolozza di azzurro e ...”
“Va bene, basta, basta ... ho capito”. Ho detto a quel punto, conquistata dal suo sapere ma anche un po’ delusa.
Non so perché ma non mi piaceva sentirmi sinestetica. Preferivo immaginarmi curiosa e ingorda della Natura, in tutte le sue manifestazioni, meravigliose e tragiche che fossero e mi piaceva pensare che l’Autunno fosse davvero giallo-rosso, col sapore di mango e odoroso di verde pungente! 
Mi sono rivolta speranzosa verso il poeta. L’ho osservato di sottecchi: era alto, magro, con una corta ma incolta barba bianca e un sorriso dolce e svagato come, non so perché, ho sempre immaginato tutti i poeti del mondo. Il suo sguardo era  rivolto verso il cielo, in direzione di una splendente luna piena, con un’espressione che mi sembrava la più felice del mondo. Quasi timorosa di disturbarlo, gli ho chiesto:
“Scusa, poeta, anche tu pensi che le sensazioni che ho provato sono state solo un’esaltazione dei miei neuroni?”
Il poeta, non ha distolto lo sguardo dalla luna. Ha sospirato e, con un sorriso ancora più intenso, mi ha risposto:
“Lo sai, bambina, che la Luna profuma di borotalco e ha il sapore di vaniglia?”
Purtroppo, proprio in quel momento, ero arrivata di fronte alla porta di casa. Ma, prima che il mio fantastico sogno sparisse, ho abbracciato il mio poeta e, con un sorriso grato, gli ho sussurrato: … “Sì, poeta, lo sapevo!”
Post scriptum: a chi volesse approfondire le proprie conoscenze sul fenomeno della sinestesia, consiglio di leggere i libri di Vilayanur Ramachandran, neuroscienziato indiano all’avanguardia negli studi di psicofisica, nonché piacevolissimo scrittore. E’ lui lo scienziato che mi ha accompagnato durante la mia fantastica passeggiata. Chi, invece, volesse conoscere il nome del mio poeta, bhé, mi dispiace ma questo è un segreto che terrò gelosamente custodito in me!
